Chorizo Con Papas Recipe

Ingredients:

  • 1 Chorizo sausage sliced
  • 1 medium size potato, diced
  • 1 small onion, diced
  • 1 Jalapeño, minced (use 1/4 or 1/2 if you don't want this to be too spicy).
  • 1 teaspoon of salt
  • 1 teaspoon of oil (corn or grape seed)
  • 2 Tortillas

Method:

  • Boil the potato in salty water until tender
  • Transfer the potatoes in a frying pan to roast them
  • Add the onion and Jalapeño
  • Boil the sliced sausages for 5 minutes
  • Add the sausages to the pan
  • Cook until the potatoes are roasted (golden) and the sausage is completely cooked
  • Wet a small hand towel and place it in a plate.
  • Wrap the tortillas in the hand towel and microwave for 45-60 seconds
  • Enjoy!
