Winter Polenta Variation

Anybody have any ideas on a good version of polenta as a side dish. A friend and I are giving a cooking lesson to a fraternal group. He is going to be showing them how to prep and cook duck, goose, and some other types of wild birds/game. Not sure what he is going to be showing exactly (probably a mix of roasting, pan frying, and braising the different birds), but I am charged with showing the guys some side dishes that might go good with that type of stuff.

So my idea was to demonstrate how to make risotto, mashed potatoes, and polenta as three kind of hearty, wintry side dishes that would go well with roast duck and goose and such. I'm planning on showing them how to make risotto with mushrooms and peas and roast garlic mashed potatoes.

At a little bit of a loss on what kind of polenta dish to make. I don't want to simply make a plain polenta with cheese and cream and all that, as I definitely want something that incorporates some winter produce. I also don't want something overly elaborate like a polenta loaded up with sausage or seafood as I want the polenta to be shown as an accompaniment to the birds, not a main course in itself.

Any ideas?
 
How about Polenta and winter squash? You could add in some end of the year sausage (aka as leftover summer sausage in my house) to give it a bit more bite.
 
Pan roasted sweet potato brussel sprouts onions with pumpkin seeds with some kind of nice vinegar with all the fat from the duck and in the polenta some acid would be nice.
