Thanksgiving

Thanksgiving is coming up soon. I'm invited to my cousin's house, and there will be about 100 people there. I'm to come up with an "appetizer". I'm thinking of a spring roll wrapped vegetable amuse bouche. Carrots, cabbage, bean sprouts, zucchini, rice noodles and ??? Any suggestions to add to the flavor? I'm looking for a flavor kick that is out of the ordinary!

Jim beat me to it, but sliced ****akes (reconstituted dried black mushrooms work great) will lend a nice, meaty taste and texture.
 
I made these recently and liked them. The mango in the roll was a nice touch, and the cashew butter in the dipping sauce is deliciously different also. Just omit the shrimp if you like.
 
Not original, but something that I have found to be a hit: white chocolate wasabi sauce. This is from Richard Blaise's work on Top Chef a few years back. He's a terrible businessman, apparently, but the boy can cook.

Sauce
1/2 lb white chocolate
1 pint heavy cream
1 celery root
2 tablespoons wasabi paste

Heat white chocolate and all but a few tablespoons heavy cream to make white chocolate ganache. Cook celery root in remaining heavy cream and puree; season. Mix wasabi, celery puree and white chocolate for sauce.
 
Thanks for the suggestions. All great, but I think I'll go with mushrooms. Love my "shrooms"!
