I keep reading that sweet potatoes are one of the best potatoes to eat out there. Apparently (as I am no nutritionist), it's good for you compared to a regular potato. It's one of the good starchs that you can possbly eat. The issue that I got is that I am not a huge fan of the sweet taste. That can change, of course since it's been a few years since I ate some just like that. The Sweet potatoes french fries scare me still.

When I do eat them, I either make gnocchi with them (instead of a regular potato). The slight sweetness that the gnocchi get is how I like it. I will try and do sweet potato gluten free gnocchi this week-end for SWMBO (as she needs most of her food gluten free). We shall see how this comes out.

The other way would be to have them in mashed potatoes. So, instead of having the classic regular potatoes and carrots, I have regular potatoes with a sweet potato (with probably a ratio of 2 regular potatoes for 1 sweet potato).

How do you make your sweet potatoes?
 
I think that, over the past 5 or so years, I have bought 9 sweet potatoes for every one regular potato - actually probably even less regular potatoes than that. Sweet potatoes just seem to be better in every way as far as my preferences go.

They are pretty versatile, so anything you do with regular potatoes work well enough with sweet potatoes. Roasted is ideal, especially when you have some great tasting juices to run over them from time to time. Mashed either by themselves or with a few carrots is a good option (remember to brown some butter and add that to the mix).

My personal favourite though, had just last night, is foil baked in the oven. The key is to halve them and then cut a small groove or trench in one of the halves, fill said groove with butter, reassemble, wrap tightly in foil, and cook at around 375 for longer than you would think:thumbup:
 
Sweet potato fries, man. Just sliced and baked in the oven. Eat 'em with coarse sea salt and spicy ketchup. You get that whole sweet/salty/spicy thing going on, and you just can't beat it.

Some of the guys tried my old faithful sweet potato recipe and gave it a good review.

Peel them and slice into 1/8" rounds
Blanch in boiling for 1 minute
Drain and place in baking dish
Puree 1 or 2 chipotle peppers in a blender with a cup of heavy cream and S&P
Pour over potatoes
Bake at 400 until tender and bubbly, 30-45 min
 
Coal fired - place directly onto hot coal, no need to wrap, and turn half way giving them 10 to 15 minutes on either side. Then split them open and drizzle with butter mixed with maple syrup and a dash of cinnamon and cayenne
 
At Thanksgiving and Christmas I use them for mashed potatoes. Usually a 50/50 mix with russetts. As my brother says, it really kills the "yamminess". He's not a sweet potato fan.

During the summer I cut them into cubes or strips, toss them with oil and seasoning, then throw them on the grill. I have one of those sheet metal grill skillets with holes in it so I don't lose too many pieces between the grate.

Yes, the OP is OBVIOUSLY not from the south! This is pretty much a staple at every church event, family gathering and holiday!

The mashmallow side of that is pretty common here in the midwest as well. The other way we typically serve them is candied yams similar to this recipe.
 
We usually boil them up and mash them with some of the more earthy spices.
Things like clove, nutmeg, cinnamon, mace.

Or we go in the opposite direction and mash them with some maple syrup.
Now that's good eating!

I went to Burger King and got sweet potato fries, and regular fries for the 3 year old grandson. Needless to say, I only got 4 of the sweet potato fries before he ran off with them.
 
Cook the sweet potatoes using your preferred method: bake, roasted, fries or mashed.

Top with lime juice and cilantro (salt if needed).

I need to try this. I usually bake or mash them.

Cook in microwave for 10 minutes and add butter, dark brown sugar, and cinnamon.
great for my diabetes because it doesn't spike my blood sugar.

I dislike the fries as well. In my family we too do something like the casserole Intotheforge described but with a crushed walnut topping and big dabs of butter. Not all that healthy though. For me, sliced and boiled for a bit and then grilled is perfect. (I use a olive oil and herb grilling mix with some other herbs when grilling veg)

This dish is how i discovered sweet potatoes. It was while I was living in TN last year, at a church dinner. I pretty much just took a fork and the entire dish to my table.

Until then I had misconceptions about sweet potatoes: They are gross, they shouldn't be that color, they are mushy, why are they orange, they are just as bad as regular potatoes, whats with the color!?

Turns out they were just cooked all wrong! I prefer them now over any potato. fries, mashed, brown sugar and cinnamon, baked, whatever it is I'm eating it.
 
I've always had them the way Marty makes them. The health benefits? A full day's supply of Vitamin A, in the form of beta carotene, in one serving.
 
My wife makes them quite often. Usually boils them until cooked, than broils them util they get a nice brown covering. Although they aren't one of my favorites that doesn't stop me from eating too many.

I will need to try the mashed potatoes with pecans and butter next week. This week, I got a sweet potato salsa on the menu. I'm very curious to try that!
