I was going to write down the recipe as I did this last week-end but realised that a video exists and it was the exact same thing... :001_rolle

If you have 8 minutes, have a look, quite different than a regular salad, with a piece of bread, it's awesome!

Yumm! I made a similar meal a week ago, mine had the peppers, onion, mushroom, chillis and tomatoes. Douse with extra virgin olive oil and a splash of balsamic, a pinch of salt and a few twists of the pepper mill.....

I did this one with Thyme as advised in the recipe. I think that using Basil or Parsley or Mint would be nicer... However, great recipe, I will do it again this week-end!

My outlaws are Sicilian and make that pepper salad at least once a week. We usually roast the peppers on the BBQ though, but I guess the oven would work just as well. If you want the skins to come off easier, transfer the peppers straight from the oven/bbq right into a large stainless steel bowl and cover with a soaking wet tea-towel; let stand for 3-5 minutes. This will steam the skins off and make them so much easier to remove.

I can't believe Giuseppe left the EVOO out, that's the best part, you need that polyphenol goodness!!:001_smile
