Seven Hundred Sandwiches

I have this book from the library of my wife's late grandmother.

SEVEN HUNDRED SANDWICHES by Florence A. Cowles (Little, Brown and Company; 1928)

It's a very interesting book; sort of a window into the twenties.

Here's the plan: one recipe a day. Some of them will be really interesting, some will be really weird. Some you'll want to try, some we likely will try.

So, without further adieu, today's sandwich comes from the chapter entitled "Meat Sandwiches."

Ham and Currant Sandwich

Mince very fine enough cold boiled ham to make a small cupful. Mix with it half a cup of currant jelly and a saltspoon of paprika. Work to a spreading paste, add a tablespoon of chopped capers and spread on thin strips of whole-wheat bread.
 
Makes sense, salty and sweet. Also "ham" may be the cut rather than the type of meat. So it may be a fresh pork ham.? who knows.:tongue_sm

From the introduction to Chapter I "Meat Sandwiches:"

Ham, in all its various forms and combinations, would probably receive a unanimous vote as the prime favorite among meat sandwiches, so ham sandwiches shall stand at the head of this list.

It seems as though the form and combination is left to the chef.

NB: In Linux, "sudo" is the command used to grant a user temporary God-power over the operating system.

+1 to great idea for going through all 700 sandwiches!

Corned Beef Sandwich II

1 can corned beef
1 cup finely chopped celery
1 small onion chopped fine
1 T prepared mustard

Chop corned beef in chopping bowl and mix other ingredients with it. Mix well. Cut thin slices of rye or brown bread and place between bread. Serve an olive with it.

This seems to me to have an awful lot of onion. We may cut that down.

Sounds pretty good. It sounds like a lot of celery too.

I just looked at the first recipe again (Ham & Current Sandwich) and noticed that it said a "saltspoon" of paprika. I had previously read it as teaspoon, because that is what I was expecting....?

Back in the day, they used individual "salt cellers" and very small serving spoons, so I am guessing they are talking about 1/8 teaspoon of paprika. I think that is where I would start.

is this referring to the brown bread in a can? if so, that sounds like a great sandwich!!
 
Ok. This is a very tasty sandwich. I decided to get about 3/4 of a pound of corned beef from the deli instead of the canned. I'm confident that this was a wise choice. :001_smile

We went with just under a cup of celery and onion and probably a bit more than the TBS of mustard for which the recipe calls. I don't have a food chopper, so I pulsed the mixture in our food processor.

The wife and I loved it! This is almost groundbreaking because she absolutely hates mustard.

So, as promised, here's your photo! What do you think?
 
Today, we stay in the chapter on meat sandwiches for the first sandwich under the "Liver Sandwiches."

Beware: this one's kind of gross and pretty dangerous. I would advise you to NOT try this one at home.

Raw Liver Sandwich

Wipe liver thoroughly and remove any skin. Place in hot water a few minutes, then chop fine or scrape. Season with salt, pepper and a little grated onion or horseradish. Serve between slices of lightly buttered bread.
