Pimento Cheese Recipe.

SWMBO bought some pimento cheese for my daughter's birthday tea party this weekend. It was good, but I was wondering if you guys have a good recipe for pimento cheese. It has to be better than the store bought version. Homemade usually is. Thanks a lot.
 
I don't have one that I've tried, but I'm going to look up a recipe on the web and give it a go.
 
Pimento cheese? Never heard of it! But my mum made something similar sounding when I was younger - 'mock crab'. It was her mum's recipe and I've still not got around to stealing it, I think it was a blend of cheese, tomato, celery, mayonnaise and a couple of other things. I'll have to ask!
 
From Bobby Flay on the Food Network, I am definitely trying this one.



Ingredients

  • 1 (3-ounce) package cream cheese, room temperature
  • 1 cup grated sharp cheddar
  • 1 cup grated Monterey Jack
  • 1/2 cup mayonnaise
  • 1/2 teaspoon House Seasoning, recipe follows
  • 2 to 3 tablespoons pimentos, smashed
  • 1 teaspoon grated onion
  • Cracked black pepper

Directions

Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It can be used as a dip for crudite or as a sandwich filling.

House Seasoning:

  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
 
I can confirm the Bobby Flay recipe is outstanding, it should be even better after it's had time to rest in the fridge.

1 medium jar pimentos
~2 lbs sharp hoop cheddar
Cracked black pepper
Sea salt
Dash of balsamic vinegar
Duke's Mayonnaise

Grate cheese into a bowl, I prefer a coarse grating so that I can see that there is real cheese in there after it is done(Effect of having too much Ruth's pimento cheese growing up that you never would have known cheese was an ingredient),and add enough Duke's Mayo(which is the ONLY mayonnaise), to hold all the cheese together. Drain and mix in pimentos. Add sea salt and pepper to taste. Add a dash of balsamic.

The flavors do improve with aging, but it is impossible not to immediately spread a little bit on a bit of nice, crusty homemade bread.
 
Duke's is South Carolina made mayo, and typically only found in southern grocery stores within a couple of states of SC. Louisiana might be a bit far west to find it reliably. It has a tangy, slightly sharp taste from the vinegar side of things, not sweet like the big corporation mayos.
 
You can use cream cheese for a "creamier" more dip like texture. Just add the mayo and pimentos to the grated cheese until the consistency is right for your taste otherwise. I like to use a yellow and white sharp cheddar. Purely for looks. Some dices jalapeños are always a welcome addition.

If you can't find Dukes, just look for a mayo that doesn't have sugar. Thats what its known for.

For those of you not from the Southern US, Pimento Cheese is a kind of cheese spread/dip made from grated sharp cheddar, mayonnaise, and pimento peppers. Its popular in the South Eastern US. More specifically, the "Deep South". It is mostly eaten as Pimento Cheese sandwiches around here, but it can be scooped on crackers, put on burgers, and all kinds of other things.
