Nacho cheese sauce?

Lately I have developed a craving for tortilla chips with nacho cheese, nachos. Do any of you have a good homemade sauce recipe? As with most things, I am sure the homemade stuff is better than the store bought.
 
Tonight at 7-11 I noticed they have a dispenser for cheese and chili which I assume is for the hot dogs and nacho chips that they sell. However, the front of the machine said "Free" Cheese and Chili". I'd just take a container there and fill it up! :eek:

I actually like the old standby "Rotel" dip:

Rotel Nacho Cheese Sauce

1 lb. Velveeta cheese, cubed
1 can Rotel tomatoes and chilies, diced
1 lb. hamburger, browned

I'm not really looking for a "gourmet" experience with nachos. Just something to eat while my Cowboys (hopefully) get over their fear of the endzone!

I slice tiny slivers that are a quarter inch thick of both Cheddar, and Pepper Jack cheeses. Throwing them evenly to all the chips so they coat them well. (Doing this first means the cheeze will stick to the chips, instead of sliding off with all the other ingredents)

Use some already warmed up left over fresh refried beans (or you can use the canned beans, or that freeze dried refried beans in a pouch from my city avaliable in many stores) spreading a thin layer over the chips.

Slice up some pickled Serrano, jalapeño, or hatch green chiles. Spreading them out too onto the rest of the nachos.

Throw it into a 325F oven for a few minutes until you can see the cheeze peaking out through some holes in the beans has melted.

Top with mexican sour cream, Guacamole, drained crumbled ground beef with onion/garlic/cumin, tabasco sauce, or any combination of the above.

Its nacho's. Sometiems I just slice some cheese and put it on some chips then toss in the microwave on a plate. :lol:
 
Koss, that sounds REALLY good. I will try that sometime. It reminds be if Taco Bell's Nachos Bell Grande (or whatever it is called).

Yeah it looks like a very large sheet of Nachos Bell Grande. Top with diced tomato and there ya go! Hehehe:biggrin:
