I don't have the recipe on hand so i will do it from mem and this is very very good.
1 lb extra lean ground turkey i believe its 97 % lean
2tbs grill mate burger seasoning
1tsp crush red pepper
3tbs seasoning sauce of choice, I used country bob's.
nacho sliced Pickled jalapeño
Baby Spinach
Green Avocado
Tomato & red onion
Spicy brown mustard
wholegrain wheat sandwich thins( check the nutrition facts and compare them in the store, some are alot higher in cal and sugar with the same amount of fiber.)

In a large bowl you put the meat in it and add the seasoning, crushed red pepper and seasoning sauce, you mix it well with your hands. You then mold the meat into patties and place the patties on a griddle and cook them.
when the burgers are almost ready to be taken off sauté the onions on the griddle

Then on the wheat thin ( No mayo, No ketchup) you add the baby spinach, then the meat, then the onion, tomato, avocado, then some jalapeño, and brown spicy mustard.

It taste better then a reg burger any day. And more feeling then a thick burger if you make them into 1/3 lb patties.

Learn various ways to prepare vegetables. Try blanching, steaming, boiling, baking, grilling, and anything else that isn't frying them. Then learn to season and possibly marinate your veggies. Figure out what goes well together - like a variety of root vegetables.

Then get yourself to your local farmer's market or just a regular produce section and learn what's grown locally and is in season. That's what you want.

Nothing wrong with a little meat in your diet, but make it a side dish to your veggies and fruits. If you get good with the veggies, you'll really begin to look forward to them.

On the Mens Health webiste they have a section on receipes. They all are healthy and tend to be very easy to make.

Chicken Salsa Soup

1-2 lbs chicken breast: boiled and shredded
2 cans black beans
2 cans corn
1 large jar of your favorite salsa
1 carton chicken broth, or equivalent amount of chicken stock
Chili powder to taste

Combine everything in a large pot and bring to a boil. Let it boil for 15 minutes or so, and then it's technically done. It's much better if you let it simmer for a couple hours.

Keep in mind that this is the bare bones recipe that I was given. I usually add some peppers, an onion, some cajun seasoning and hot sauce, etc. This is very good with crunched up tortilla chips and a bit of shredded cheese on top, but it's much more healthy if you leave that out.

This is also a perfect soup to make in the crock pot. Prepare everything the night before, and dump it in the crock pot. Put the crock in the fridge, and just set it in the crock heater in the morning. Turn it on low, and you've got perfect soup ready after work.

I just layer zucchini, onion, potato, and tomato in a baking dish with olive oil and breadcrumbs and bake at 350 until golden brown. Everybody loves this dish.
