Knife Sharpening Services

I am now convinced from my "how to thinly slice meat" thread that my knives need sharpening. Looked at the videos, looked at prices for stones, and decided to look for someone to do them for me! Called two knife sharpening services (to date) in Omaha, and found that both of them use emery cloth belt sanders to sharpen knives. Is this good, bad or indifferent? Prices seem reasonable enough at about three dollars per knife, but so far have seen no threads on using belt sanders for sharpening. Appreciate opinions.
 
I've heard of using belts for it, especially if a bevel is being reset versus just honing an edge. It's a pretty aggressive medium, and I think most of those services cater to restaurants that bash their knives pretty good.
 
Jim, the knives would include a Lampson Sharp paring/deboning knife and santoku, a Wustoff serrated slicer, and several other Wustoff kitchen knives.

Most commercial sharpeners use these grinders with various belts. That is the same tool that the knifemakers use to do some of the shaping on the blades as well. Your knives will be fine using them if the person is skilled enough to not burn them and can remove the wire edge after the grinding. Sharp knives can be addictive.

There are services and services. Typical knife services used by restaurants are mostly about getting a good edge on the knife quickly. The angle they make is what their equipment is set to make. Some do free hand. They are working fairly quickly so may touch the belt on the knife where they are not actually trying to sharpen. I think they use fairly coarse grits . . . . look up fine grit knife stone on the internet . . .. I see 320 grit. The water-stone (King) that I used as my only stone for many years was a 1K, I.e., 1,000.

I took a couple of my German knives to the most popular firm in my area . . . $3 per knife. They did a great job but not the crazy sharp I've come to love.

Belts exist in amazing grits using various high tech crystals and there are leather belts for stropping. Some of the high end services use these . . . and you will not get this for $3 per knife.

If you want to experience a really sharp knife that will be done by hand on water-stones to a fine polish check out Dave Martell's site . I've had the pleasure to enjoy a few knives that were sharpened by him from some group buys we made here. To be fair I need to mention Jon Brodia from Japanese Knife Imports who sourced the knives and brought them to North America.

If you fish around in old posts here there is a wack of great knowledge that will help jump start you on your way.
