I'm saving up my pennies to get a Rolex for my wife. In the meantime, I was thinking of getting her the Invicta Women's 8939 Dive Watch to tide her over. She always tells me that she wants something like my stainless steel Submariner and I thought that this looked the part. Any thoughts?

I know people like to bash Invicta for a variety of reasons. Personally, I think their better watches are OK and their cheap watches are just that. The main issue to me with Invicta is their warranty and customer service. If you buy it pray you don't need service. As far as the diver goes it's a Rolex knockoff and a good serviceable watch.
I collect watches and dive. I have several dive watches, but my latest watch came with a stainless band and a resin band. Look around for a Swiss Legend. If she gets one, she may give up on wanting a Rolex. The Swiss Legend Diamond also comes with a winder.
I purchased a Wenger Battalion dive watch for my girlfriend. She's very happy with it. She swims with it. Here's a photo. Her's is black faced.
A bit more costly but the Nymph is a nice sturdy watch with a silver dial (the Coraline is a bit louder) - I got my wife a vintage one a few years ago and she wears it a lot. If it's for real diving this is the real thing.
