Linguica, eggs, and rice. Mmmm

My wife doesn't like linguica, so she got leftover pork shoulder:

From Wikipedia:
"Linguiça (/lĩˈgwi.sɐ/; ling-gwee-sah) is a form of Portuguese cured pork sausage seasoned with onions, garlic, and paprika."

I grew up with this in Southeastern Mass. Fantastic!

Last month I had for the first time an omelet of just eggs and linguica.

Loved it!

What a great combination.

In Texas we eat eggs and chorizo. Wonderful combo in my opinion.

I've never tried it, but the linguica sounds good,

Similar to Chorizo, but different. My background is Spanish, so I grew up eating both. My dad is funny because he used to eat stuff like this all the time, but he says just talking about it now makes him look for a toilet. Classic.

I've heard John C. Dvorak ramble on about linguica on 'No Agenda.' If I recall correctly, he is trying to setup some sort of application to let people search for decent linguica in their area.
