Blaireau au sang, traditional French food

In the spirit of using left-overs (from your brush that is) I'd like to share an old country-side recipe for the traditional French "Blaireau au sang" or literally "Badger in Blood"


You'll need:

1 badger
1 glass of pig’s blood
1 small glass of armagnac
1 ginger root
1 bottle of dry, sparkling white wine
2 eggs
1 pot of crème fraîche
salt and pepper
500g forest mushrooms OR chestnuts to accompany
100g butter
oil

Eviscerate and skin your badger, and soak it in a fast-flowing river for at least 48 hours. This will help you to de-grease it more easily.

Once the badger is de-greased, cut it into pieces and brown it in a frying pan with butter. When the pieces are golden and stiff, flambée with the armanac, season and add a grated soup-spoon of ginger, fresh if possible.

Pour over the wine, and simmer gently for at least two hours.

At the end of the cooking time, mix the chopped badger liver (cooked beforehand in a little oil), the glass of blood, two egg yolks, a coffee-spoon of ginger and the crème fraîche, and pour into the cooking dish. Serve immediately.

Badgers are everywere here.

They don't have any natural enimies here.

We have two bigger predators, wolf & bear, but they won't go near badgers, because of the badgers extreme aggressiveness & desire to fight anyone, anywhere.
So atleast once a week when I drive to work I see badgers on the road.
A bit flat, but that might just tender up them :biggrin1:

Then of course, you can hunt them, but it's pretty hard, since they live under ground.
The way to go is with a specially trained dachshound that goes down in their tunnels & provoke them to come up.
Then, you have a second or so to shoot them with one of these:

If you miss, you will probably have to hear the nasty sound of your one bone being crushed in its jaws...

Badgers were a mainstay of the diet in Europe as late as during WW2.
I have elderly relatives that remember eating badger late into the 50s.

Even the fuzzy, fury, cute one hurts you...

A good friend of mine played rugby in Oz for a few years.
The club had a hired "snake guy" who cleared the field before every training.
Nuff said :tongue_sm

So, anyone tried the recipe yet :lol:
