So why are some boar knots banded and others natural? Are the bands added just for aesthetics?

Yes, purely aesthetic. I prefer the natural look myself.

I have a Sem 1305 that i love but the fake bands are kind of a bummer. Do you guys recommend any particular natural boar brushes? Or even better, a knot for restoration purposes? I have an Ever Ready 200T handle that needs a 20mm and i'm not sure which way to go. I have a TGN finest already and like it but want to add more variety to my arsenal..
Buy one of the B&B essential boars. You can't beat the price and I'm here to tell you it's one of the best products for the money I have ever spent on shaving gear.
