Anyone have any amazing recipes on how to make Arancini? I am going to make them for my girlfriend for the first time as her birthday is coming up in the next couple weeks. If you also have any tips or suggestions on how to make them please let me know.

I had to Google Arancini to learn what they were, so do not have a personal recipe I can recommend, but one of the first that came up was from Giada de Laurentiis and she ususally has some good recipes.

Yeah, her recipes are always good, I've used many of them. My 2 year-old son calls her BABY (serious) and I think wants to marry her.
Make a risotto your gal likes. Let it sit in the fridge overnight. Shape into balls. Dredge in flour, egg wash then breadcrumbs. Let it sit for a minute or two. Fry.
