Only if you don't want to hone as often. You could use one razor, you just have to hone more. It seems that you would strop every time you go to use one, but one razor will get dull faster than an assortment of seven.
No, they are not. Typcially having two is recommended, in case one is damaged and needs to be sent out. It's also good to have one professionally honed razor to use as a benchmark for your shaving and honing.
You really only need one, though. All that is necessary for straight shaving is one straight razor.

I'm trying to get fifty one 7 day sets so I only have to strop once a year.
I know there are 52 weeks in a year, but that last week is reserved for stropping.

I think the others have covered your question pretty well. No, you don't "need" a 7-day set to shave with straights everyday, but they sure are cool
if you get into straights, you will end up with more than 7 straights anyway. They wont be a set, but youll have them
I sometimes use around 7 razors in a single shave, just so that I can show them love often enough. So that would be a single day set for me.
But they are typically different razors even though I have a few complete sets.

That was a nice set, Mike, I didn't buy it, didn't even try as at the time I had started to realize I may have a small RAD problem
