Big O's Hot Stuff

20 Habanero peppers
3 carrots
1 1/2 large white onion
8 cloves of garlic
1 tbsp salt
1 tbsp black pepper
3 limes
10 tbsp of white vinegar
Cut habaneros in half and remove stems and seeds- reserve seeds if you want a hotter sauce. Drop the peppers in boiling water for 30 seconds to blanche (alternatively, you can put the peppers in a pan and place on the grill to smoke them- use indirect heat). Remove the peppers, and put the chopped onion, carrots, and garlic into the boiling water and cook until tender. Once completed, place all into a blender (add the seeds now if you want a hotter sauce). Add the juice and zest of the limes. Blend until desired consistency is achieved. If you want a thinner sauce, add some of the water that you blanched the peppers and vegetable in.
