Well, here's my 2 cents... I find that a lot of people tend to over-strop, thinking they NEED to do 50, 60, 70+ (100?? ) passes etc. Does it hurt to do it if you don't need to? Maybe not, but personally I think that would lead to an increased chance of dulling your edge as you are opening yourself up to errors due to finger fatigue.
Where I think the difference comes in with quality and better leathers is how much it takes to get a good edge. For example, 15 passes or so on my Ambrose Spanish is all I need to do vs. ~40 passes on my ebay starshavingsupplies cowhide. I'm usually short on time so I don't want to be stropping all day... to me it is $$ well spent on a good quality strop.
