Crazy Kiwi Hot Sauce

1/2 cup apple cider vinegar

3 tablespoons of yellow mustard seeds
1 tablespoon fennel seed
2 tablespoons sugar
3/4 onion chopped
2 cloves of garlic chopped
20 habaneros ( more or less at your discretion YHLMV )
1 tablespoon of Rata honey (use what you have/like)
3/4 can of peached with juice.
1/2 teaspoon English mustard powder.
1 teaspoon turmeric. ( this makes it yellow )
salt & pepper to taste.

Combine vinegar, mustard seeds, fennel seeds & sugar in a pot. Gently heat to dissolve the sugar. Raise the heat to boil. As soon as it boils turn off and place a lid on it. Leave for 15 minutes then strain, reserving the liquid.

In a pot add some oil and sauté the onions till clear (don't brown) with the chilli add the garlic with in the last minute as not to burn. This takes 5 minutes.
Place in a blender the sautéed onion/chilli with the peaches and about half the juice from the can plus the flavoured vinegar. Blend well.
Return to the pot and add mustard powder, prepared mustard, turmeric, salt & Pepper
Simmer for 5 minute and adjust seasoning if needed. I added the honey here and the rest of the peach juice and another teaspoon of mustard.
