Your Salsa Recipes?

Just found this web site yesterday and I've been reading almost non stop since then.
Anyway, I love salsa. I would be interested in knowing some of your salsa recipes.

easy nuff salsa roja

2 tomatoes (beefsteak)
2 jalapenos
2 serranos
1 medium onion
1/2c garlic
28oz can whole peeled tomatoes
1 bunch cilantro
salt pepper & cumin to taste.

rough chop & roast veggies ~40 minutes
combine roasted veggies with spices, can tomatoes & cilantro
blend with immersion or in a blender.
yield about 2 quarts.
 
Pineapple salsa -- easy, cool, goes great with pork

Can pineapple chunks
Bunch of mint leaves, torn
1 small red chilli, sliced and deseeded
1/2 red onion
Juice of half a lime

Just mix all together in a bowl, and gorge.

I freehand dog rockets
Quick and dirty.

One can Rotel tomatoes and green chiles.
One small onion, finely chopped.
Juice of one lime.
1/4 cup chopped cilantro
Lawry's season-all, to taste.
Drain off half the liquid from the Rotels. Save it in case you need to add some back. Add the other ingredients. Add the original juice as needed. Refrigerate for a couple of hours, covered.

Volcano chipotle sauce
2 cans chipotles in adobo sauce
juice of two small limes or one big one
1 onion finely chopped
1/3 cup chopped cilantro
puree the chipotles with the adobo sauce in a blender or food processor with the lime juice. Add other ingredients. This stuff will be pretty hot but even if you use it sparingly you get a lot of flavor out of it so don't mind the heat... just use less if you have delicate taste buds.
 
This is a old post of mine from another bbq forum I go to. This recipe has also made it into a cook book or two and is served in three restaurants in Rhode Island of all places…it is great! the radish is the kicker, recommend to use with fish tacos.


This has been a long time coming. This always gets rave reviews from anyone that eats it. My wife hails from Cuernavaca Morelos and this is the picofrom down there.

3 bundles radishes
9 medium tomatoes
3 to 4 juice from lemons
1 medium cabbage
2 bundles cilantro
2 to 3 jalapenos (more if you like it hot)
1 onion
salt to taste

1. cut and cube up all ingredients except salt and lemon of course

2. run all through food processor (rough chop if you like)

3. combine in bowl and add lemon juice and salt to taste. You will not be disappointed with this.
