I bought a couple of nice Gillettes on e-bay, but now think that they are really in too good of condition to use for everyday shaving. I'm still new to DE shaving, although wet-shaving all my life. If I get an old Gillette cheap on e-bay with worn plating on the razor, will it affect the quality of the shave?

In a word - no. I've shaved with old Gillettes that had had virtually no plating and they still shaved fine. Just be careful though of any pitting on the head. Dragging that across your face might be scratchy.
No, and I don't see worn plating as necessarily a bad thing. It's patina and I enjoy knowing that a razor served others for decades.
What's the use of shaving if you can't spoiler yourself with a nice razor. After all that's why most of us are here. Shave with it and just take good care of it.
