when no plan comes together - lentil mushroom soup

About 2 hours ago, SWMBO asked "'What's for dinner?", as is her wont.

Hmmm. What do we have?

Oh look. Green Lentils -- let's get a half-cup of those going in the rice cooker (on the porridge setting),
cooking in chicken broth (a half-box leftover in the fridge), a splash of white wine, a tsp of olive oil,
salt & pepper.

Rummaging through the cupboard -- a package of dried mushrooms (porcini, ****ake, black & oyster).

While those rehydrate, let's heat up the rest of chicken broth, along with a sliced leftover half a tomato.

Oh look -- a pack of buckwheat noodles. Time to boil water.

While the water boils, slice up half an onion lengthwise -- slow cook
in a fry pan with a bit of olive oil. Rinse the mushrooms, add them,
mix & cook on low for another minute or two, then into the broth.

Water boiling -- in go the noodles. When they're almost done,
grab a few handfuls of Trader Joe's 'Power Greens' (spinach, kale & chard).
Into the broth for a minute or so -- just long enough to wilt.

Plate -- noodles, lentils, & spoon out the soup.

Finish with a squeeze of 1/6 lime into each bowl, with hot sauce of choice
at the table (I added Sriracha & Tabasco Habanero).

I had no idea this was gonna happen an hour earlier, but SWMBO was impressed --
we finished dinner full but, not over-full.

To paraphrase Hannibal Smith, I love it when no plan comes together.

Thanks. It was rather tasty. The highest & best use of those odds & ends, I think.

And I like that one could easily replace the chicken stock with vegetable stock to make it vegan.
 
Excellent use of items on hand.

I'm in the same boat tonight. I've got ground beef and lentils that need to be used up and soup sounds about right.
