A vegetable frittata. My favorite breakfast other than tacos.

Not sure what to call it or if it has an official name but this is what I made for breakfast this morning -

It was pretty simple to put together. Warmed up a tortilla in a skillet with ghee and covered the face up side with sautéed mushroom, shallots, and basil over which I cracked 3 eggs. Cooked in the skillet covered for a few minutes then placed another tortilla on top. Flipped the tortillas and then added some sliced tomato and basil and, of course, some smoky gouda inside and out.

This was a really nice change and I really liked the texture and flavor of the tortilla heated in the skillet with ghee.

I was up at 4:30 this morning thinking about what I’m going to cook for breakfast. Yeah it’s sort of a thing I do. Below is some Frenched eggs, sausage patty, fried potato Medallions, avocado and garnished with cilantro, grill Tomatoes and jalapeños. Just a little squirt of olive oil over all of it.

This morning I tried my hand at oeufs en cocotte as demonstrated by Jacques Pepin. I made some slight modifications, including a pork sausage patty and slice of tomato and garnishing with chives, tarragon, parsley, and minced smoky gouda.

As you can see, I also unmolded the eggs onto a slice of sprouted bread instead of an English muffin and skipped the drizzle of cream on top.

A bit labor-intensive time wise but certainly a wonderful flavor and texture.

Did anyone feel the tectonic plates shift this morning??? No eggs for breakfast! I went with a simple bowl of rolled oats oatmeal topped with blue berries, dark brown sugar, and a splash of half-n-half.

This morning's breakfast was an experiment that was driven, more than anything else, by the need to get rid of leftovers. I had some leftover leeks & potato gratin, seasoned with garlic and Stilton blue cheese. I decided to fry that in a skillet with a little ghee to make a 'base' patty for eggs -

Then I made some sunny-side up eggs, 'mirrored' ala the French style as taught by Jacques Pepin, and placed that over my leeks & potato patty. Finished it off with some fresh chives on top.

Crispy French rolls. One with prosciutto and one with hot soppressata with cucumber and tomato white Cheddar cheese. Buttered with salt and pepper. Served with a cold brew with cream and a shot of caramel syrup.
