Simple breakfast for a great day given to me by God.
Frittata Sunday--sauteed asparagus tips, mushrooms, onion, cherry tomatoes, added to sausage and bacon crumbles, shredded cheddar, and half dozen whipped eggs with a bit of sour cream. Along with some red grapes, fresh white peaches and orange juice, a very tasty and satisfying breakfast. Frittata recipes abound online, I get the best results baking in the oven.

Post workout breakfast. That's chicken and pineapple on one plate, then Ezekiel bread French toast with sugar free chocolate syrup, fat free vanilla ice cream and berries.

You know, this picture inspires me to make some pancakes and stuff some scrambled egg, cheese and sausage between two 'cakes. This is how I have had them in my favorite hole-in-the-wall local diner when I was living up in Saranac Lake, NY.

Breakfast the other day was my "standard" French omelette but what made the meal a bit unique was my attempt to resurrect some Italian bread by placing them under the broiler for a minute.
