Saturday night was a cacio e pepe but I needed to use some basil from the garden so I made a quick pesto and mixed it in. What a fresh, quick delicious meal.
Sunday night made Ina Garten's 5-star salmon cakes and a garden salad the recipe is a keeper.
Tonight was grilled pork chops. They were marinated in soy sauce seasoned with Penzey's Chinese Five Spice and a healthy heap of garlic/ginger paste. During the grilling process I basted them with some soy sauce, garlic/ginger paste, and honey thinned out with a little water. Here they are right off the grille -
And here is one plated with mashed potatoes and cinnamon apple sauce -
Had a nice coffee stout beer from Thimble Island Brewing Co, right here in Branford, CT, to wash it all down. It doesn't get much better than this.
Sausage with couscous with mixed veggies mixed in. Sausage on couscous is something I had when studying in France. I still make it on rarer occasion. Although, I can't get the same sausage here.
Red potato salad heavy on pickles and dill weed. Zucchini pie, because 3 zucchini plants. Basically sautéed zucchini, mushrooms, onion. Then added 8 eggs and cheese. Bake for 30 minutes or so.
Anchoas Fritas on rice with macaroni salad!! I was all alone on this one. The rest of the family got chicken katsu tonight. True to the “Anchovies” thread, I used the remainder of hot oil to fry the anchovies I picked up at the open market today.
