That looks and sounds great but the wife would probably have me in isolation for a few hours afterwards!

My husband said I could definitely try making it again. :biggrin1:

I was intrigued when I heard about a recipe that used hash brown potatoes for a quiche crust the other day. I love me some crispy hash browns. I can see making it with a bunch of different fillings in my future. :yesnod:

Incidentally, my 10" Staub skillet worked out really well for this. That black matte interior enamel coating they put on their cookware is about as nonstick as a well seasoned regular cast iron pan without the upkeep.

I am beginning to believe that this is your favorite meal!!

I do like it a lot. It is so inexpensive, easy to make, tasty, and one batch will last me three or four meals with very little cleanup or time over a stove. Cooking is, in the words of Ron Popeil, "Set it and forget it!"

You also caught me using up the last of my frozen leftover ham to make room for the holiday leftover ham that will appear in two or three months. Haven't decided which meat for which holiday yet.

My favorite is either steak or roast simmered in rue style gravy served over rice, but they require a lot more work and would get less "special" if eaten with great regularity.

Dinner was out on Friday, Bar A Thym which is probably the favourite place: I had NZ Te Mana lamb rack, followed by Shameem's Rhum Baba, she knows me too well and puts double the normal amount of Diplomatico in it...

2 inch steaks cut from a whole beef tenderloin, grilled & served with mushrooms and onions. Golden potatoes halved then grilled in foil with butter, and grilled zucchini. There was a Caesar salad in there somewhere as well.
