Last night was a baked chicken breast recipe we hadn't tried before...pretty good. Served with roasted 'taters and fresh green beans.

Oh my! Looks delightful!
My lovely bride made me some zucchini lasagna! No groaning, it was delicious!

Here's a picture of the weave job she did on the top. I wish I had a pic of the zucchini that gave up it's life for this meal. I'm not an exaggerator, as you all know, so when I tell you the neighborhood kids named it Moby before I rescued it from the pool I know you will believe me:

And here's a few pictures of the homemade applesauce from a friend's Macintosh apples that she picked up off the ground.

Did I mention I married above my pay grade?

Last night we went to a "Candlelight" concert at the Old Parliament Building here, a local string quartet playing a selection of Queen songs (rather daringly they finished with Bohemian Rhapsody, and did a good job of it too!) and after went for Hainanese chicken rice - poached chicken, broth, rice and the usual condiments: ginger puree, chilli sauce and dark soy. The wine list was not up to much(!) so a couple of G&Ts instead. While all this was happening, Singapore was having its National Day Parade, postponed from 9 August, so a fly past from the RSAF, 5 F-15s, a couple of Apache helis and a Chinook trailing a massive flag and finished off with a thunderous fireworks display. I took this a couple of years ago but the programme doesn't really change.AF44DAAE-B69A-43E7-81C8-D48DEC01CDB0.jpeg

I started with Spanish omelet but ended up adding whole bunch of items :

Potatoes, tomatoes, onion, ginger, garlic, green chili, cheese, Italian herbs, tomato sauce and other spices.

I should start cooking before I start getting hungry and not when I'm already hungry, lol.

It's a Lodge skillet - perfect for a wide variety of dishes.
