What are your favorite wood chips for smoking & why?

I agree, but consider mixing in a little pecan, especially since you already keep it on hand.

I recall a using a pecan\oak mix before. I think it was on chicken and liked how it turned out.

I do not use chips for smoking on my smoker. I just use oak, pecan or hickory in small chunks 4 x 6 size. But I will use chips on the grill over the top of charcoal or lump wood charcoal. I never ever soak them in water…the water tends to emit an acrid smoke Taste.

Yep. Folks soak them because they want to see smoke, but the best smoke is the smoke you can't see.

I like apple, cherry or chopped up Jack Daniels oak barrels. What I choose usually depends on what I’m smoking. Sometimes I use a combination of two, sometimes a mixture of all three.
