Rosemary nitrous infused vodka, elderflower syrup, and fresh grapefruit juice, topped with a lime egg white foam.

The the rosemary, elderflower, grapefruit combination is wonderful. I do not think the foam does anything useful other than gild the lily for presentation. Muddling probably works as well as nitrous infusion.
 
I just had a bottle of Midleton Very Rare (2017) delivered so I will be thoroughly enjoying it when I get home.

I tasted it at the Jameson Distillery in December and haven't been able to stop thinking about it since.
 
Peruvian pisco sour with gum syrup. Seems to make all the difference in this drink. I had never had a pisco sour I liked previously. The egg white and gum seem to calm the edges of the raw brandy that is pisco. I am anxioust to try some Chilean pisco.
