Well that was fun

Well I learned a valuable lesson on vacuum brewing yesterday; the draw down is important, don't not just move off the burner and walk away . I had been using the whole stove top, so I just slid the pot to the side, bad idea. Drawdown took probably 10 minutes, and in that time I think every last bit of caffeine was extracted. Drank the pot about 4pm,finally dozed off around 2am! It was still comparatively delicious despite the long brew though, so there is that!
 
Sounds like you might've even sucked some caffeine out of the vacuum of the universal ether. If it start to take too long, I pull off the top to break the seal and let gravity quickly finish the brew.
 
I thought about that but wasn't sure if the brew would be able to flow back down, thanks for the heads up!
 
I let mine "boil/bubble" for about 30-45 seconds before removing it from heat. Give the grounds a good stir round in the upper vessel (using a plastic spoon), and in about 1-2 minutes everything starts being pulled back into the bottom vessel.

If you feel you got enough air out by boiling/bubbling for a while after the water went up the tube, check your gasket. It should be soft and pliable. Not getting a draw back is indicative of a weak seal or hard gasket.

Somewhere around coarse drip or moderate press. Sort of on the chunky side. I will sit the Baratza between 30 and 40 somewhere (about in the middle usually) as it is not all that critical with a vacuum pot
 
I use a grind similar to what I'd use for a Hario V60 pour over (medium-fine), aim for about 55 seconds of heat time. I stir immediately after adding the coffee to wet it all, then again about midway through. Then I remove heat, one final stir (two times around the top vessel) and if the drawdown hasn't started by the time I'm finished with the final stir then I blow on the bottom to jump-start the vacuum. Then it shouldn't be more'n 30-45 more seconds. That is for a 375ml serving, a larger pot may take longer.
