Tom Collins and the Out of Date Drinks

With summer officially here, I'm ready to start enjoying my favorite hot weather cocktail, the Tom Collins. This was a very popular drink some years ago, but now not so much. What are some of your favorite drinks that have fallen out of favor and should be revived?
 
The Collins is really good. Essentially a lemonade with gin added. I have seen a number of people order gin and tonic only to pucker up real good when they got that lovely dose of dry gin botanicals and tonic water with quinine. I quite like it but most have to acquire a taste for it. The bartender would quickly offer them a Tom Collins and the difference between the slightly sweetened Collins and the G&T won them over almost immediately. Good barkeeps should always offer the Collins up for a refreshing summer drink when a patron doesn't know exactly what they want. It is a classic for a very good reason.

I have always been a bourbon kinda guy - Whiskey Sours and Old Fashioneds. Made a couple Whiskey Sours last night - 2 oz Makers Mark, 1 oz simple syrup, 3/4 oz lemon juice, 1-2 tsp of egg white. Put into a shaker with no ice - shake to emulsify. Add ice, shake again, strain into a glass. Awesome.

egg white in a sour? huh. New one for me.
 
I'm also a big fan of the whiskey sour. It's tough to beat a good Old Fashioned as well.
 
Maybe my bars are out of date to, but I see a lot of these drinks all the time...

One I don't really ever see is a Perfect Rob Roy. When I bartended, there was an older gent (70 or so) who always ordered those. I don't think I've seen one for 5 years at least.
 
The Tom Collins is certainly not the top trendy drink on the club scene, but it is popular enough that nearly any bartender can make one without consulting a bar book. I enjoy them immensely. Other not so standard drinks I enjoy: the gimlet, the proper daiquiri (not the super-sweet blended thing), and well made margaritas on the rocks (yes, I categorize this as "not so standard" because good ones are few and far between).
 
Yup - been going off the Robert Hess webcasts. So far, he hasn't missed a beat and everything I have made has been excellent.

Whiskey Sour

Hi Dennis. I have seen another set of videos on YouTube which use the egg. There is a series of videos there called; The Best Cocktails in New Orleans. Hosted by the Library Lounge and presented by a Chris McMillan. Superb. Chris has this great voice and presence and makes cocktails the right way. He had a great one of the Whiskey Sour including the egg white treatment. Any future sours for me will be made the same way.

A great refreshing warm weather drink is Picon Punch. Makes use of Amer Picon (now defunct in its original 78 proof form) or Torani Amer, a delicious orange flavored, bitter spirit.

1.5 oz. Amer Picon or Torani Amer
0.5-1 oz. lemon juice (optional)
0.25 oz. Grenadine (homemade of course, 1:1 pomegranate juice, baker's sugar)
tsp brandy (float)
2-4 oz. soda water
Combine with ice in a wine goblet.

No way, This drink is as popular as ever. I'm 28 and this drink is still incredibly popular amongst college students and every other age group I've seen. When I tended bar, just a few years ago, it was one of, if not the most cocktail.

No kidding. I attended a large fundraiser with an open bar at my law school a year or so ago and asked a friend who was working bar what the most popular drink was. She said far and away the most popular were the tonic mixes: both vodka and gin. It was mostly law students, but a fair number of lawyers, professors, and members of the community were there. I would put the average age somewhere between 25 and 30.
 
What is wrong with a good ole fashioned Tom Collins.. Come on this is a staple drink. lol... Recipe right here is the best way to go about making it. This to me is a top 5 drink of all time.
