Not much to report at the moment other than The Plan. The Plan is to buy a new grill/smoker around April. I've narrowed the choices down to either an Assassin 36 grill or a Lone Star Grillz 20x36 offset. Currently leaning heavily toward the LSG. That is The Plan.

Long way from Baltimore but good pit beef is very possible. Should be ready in about 90 minutes. Horseradish and onions are standing by.

This is right out of the refrigerator. We ate a decent chunk out of it last night. Indeed it was a solid success.

My mother cooked a roast yesterday and I brought home the leftovers with juices. Today I’m gonna shred the meat and reheat in it juice and pour over toast.

Made my fist batch of beef jerky today. 2lb eye of round, soaked in a Whole30 complaint marinade for almost 24 hours, and dried on the WSM for 5.5 hours with a few small pieces of mesquite @>165. It turned out better than I had expected.

That looks really good.

I didn't have a clue what the 30Hole thing was, and when I looked it up they lost me at no alcohol, no tobacco, then was no grains, no dairy, no beans, no baked goods...etc. No way.

I gotta die sometime, so I'll take quality of life. Just get a bit of exercise.

My standard marinade for jerky (and there are many) is enough liquid smoke to cover and add salt, pepper, and garlic powder to it before you soak the sliced jerky overnight.

This marinade was coconut aminos, salt, pepper, onion powder, garlic powder, garlic, smoked paprika and Chipotle chili powder.
 
Haven’t posted around here in a while but I have been using my Traeger quite a bit lately.
Tonight was smoked burgers with melted Gouda, cheddar, pepper bacon and a fried egg. Good stuff!
Smoked a couple of pork shoulders yesterday too, came out pretty decent.

I've never used coconut aminos, but looking it up since it's kinda like soy sauce that might work. That marinade looks good...have to try it...except leave out the chili powder, I hate store bought chili powder.
