Tea Temps?

Hey guys I received my starter box from Jas-Etea today and am itching to brew some tea up, but before I do I have one question. How do you determine your water temp? I know different teas dictate different temps at which to steep at, but what is used to check it? I am guessing a meat thermometer or something similar as the water heats in a pot? Thanks for the help!

I know very little about brewing tea, but I did notice something very interesting the other night when I was watching the season finale of Breaking Bad. One of the characters was brewing tea at home and he was checking the temperature of the kettle with something like this http://gearpatrol.com/blog/2010/06/24/ryobi-tek4-professional-infrared-thermometer/. I really don't know how well that would work.
