Beer Cheese Spread/Dip

 16 oz. sharp cheddar cheese, roughly cut into ~1/2 inch pieces or coarsely grated
 1 Tbsp Worcestershire sauce
 1 ½ tsp hot mustard
 1/4-1/2 cup onion, roughly chopped medium (less if hot, more if sweet)
 1 clove garlic, smashed and minced
 ½ tsp salt (can start with less and add more at the end)
 ½ tsp freshly ground black pepper
 ½ tsp hot paprika
 ½ tsp ground turmeric
 5-6 green onion tops, depending on length, chopped (or about a tablespoon or so of
chives)
 6 oz. German beer
1. Place cubed/grated cheese into a food processor bowl. If the cheese is only cubed, pulse until it is finely
chopped (around 10 1-second pulses, but just do what it takes).
2. Add all other ingredients and process until mixture is smooth and uniform.
Pause and scrape down the sides, if necessary.
3. Refrigerate for at least 1 hour before serving.
4. If desired, garnish with a healthy sprinkle of paprika and finely chopped chives or green
onion tops.
 Any good quality beer will do, but the best tends to be a good bock or
Oktoberfest/Maerzen

I love this stuff, and it takes all of 20-30 minutes to make, including cleanup.

Sorry for the odd formatting, but I'm copying and pasting via Dropbox on my phone.

Mrs. TL's Nearly World Famous Buffalo Chicken Dip

-1 Store-bought Roasted Chicken (BBQ flavor rocks)
-12 oz. Cream cheese
-1 bottle of ranch dressing (16 oz)
-1 bottle Frank's RedHot Original (NOT the wing sauce) (12 oz)
-2-3 ribs of celery, chopped into 1/4-1/2 inch pieces
8 oz. Sharp cheddar cheese, coarsely grated

1. Preheat oven to 375F.

2. Put the cream cheese and ranch dressing in a small saucepan over medium-low heat, stirring occasionally, until the cheese is melted and everything is combined.

3. While the cheese is melting, shred the chicken meat.

4. Put the shredded chicken meat into a 13x9 inch baking pan, toss with the Frank's, and gently press into an even layer.

5. Top the chicken with the cream cheese/ranch mixture and spread it evenly.

6. Top that with the celery. Use enough celery so that you pretty much have a full layer (it's good!)

7. Bake at 375F for 20 minutes. Top with the grated cheddar, and bake for another 20 minutes. If you like your cheese good and brown (like we do), finish under the broiler for a few minutes.

8. Let cook slightly and serve with your favorite chips (Fritos Scoops are the best and can stand up to this stuff)

You can make this ahead of time and reheat it. Mrs. TL likes to take it all the way up through the first 20-minute bake, then refrigerate it overnight. Then, she does the second 20-minute bake the next day.

Great stuff!
