I voted Sub. Truth be told, given the choice, I'd go for the older style Sub though. I prefer the "shoulders" on the older ones a bit more. Both are great though.
If I had to choose only one Rolex, I'd go for the Submariner. It's a quintessential Rolex, that along with the Datejust, is instantly recognizable as a Rolex. That's a plus and minus, depending on your point of view.
I like a date function on watches - so that's another plus for the Submariner.
The Milgauss is cool, however. It has a great history but it's a throwback or reinterpretation of the classic Milgauss rather than an uninterrupted production like the Sub.
I agree with the other poster that the older Sub "looks better" than the current Submariner. I like the slimmer lugs on the older version and it looks more "balanced" in design. The newest version has a much improved bracelet, clasp and the cool, higher-quality bezel, though.
I have to see them on your wrist. How quickly can you get to Thunder Bay with both watches?
No really, I've been lured into watches that look good on the shelf but don't look good on my wrist.
For that kind of money I'd want to make sure that what I like today is something i'm going to like 20 years from now.
So assuming that you have already done that (Boy I'm way ahead of myself here) I'll say the Milgauss is not as common and thus the more interesting choice.

Like many others have said Subs are just too common (IMHO). If you like the Sub then as LBF mentioned you might want to look at the GMT II, slightly more unique, more watch for the money. I may be bias though as I'm just about to pick one up.
I do really like the Milgauss, the green crystal is stunning in person. I have a personal soft spot for the white face one that they discontinued though.
I don't know if I would use the term "beater" with a Rolex, but as an everyday driver I would choose the Milgauss. I am a long-term Sub owner (and they are a great watch) but the Milgauss is less common and really appeals to me in that form.
Same here, but mine is a SS Oyster Date. I voted for the Sub. It's so iconic, they do take a beating, and they really are amazing watches. It cured my Watch AD (since 1993).
