Plans and replans

So Father's Day was supposed to be my wife's parents and us. They are pretty easy so I found a nice prime steak and picked up 5 lobsters for surf and turf. Hoping there would be some leftovers. Well, we ended up having 18 people including a bunch of teenagers so plan "B" was dogs and burgers. I just finished picking all the bugs and have a nice lobster stock started....any thoughts on using it? The obvious answer is bisque but what else you got?

You have lots. So make the bisque but perhaps make some lobster burgers. Some of my fondest memories are of traveling the Cabot Trail with my wife in Cape Breton Nova Scotia and stopping at a small place and having some very fresh lobster on a bun . . . and crazy coincidence there were 20 or so people in the bay helping a whale off a sandbar back into the ocean. (I think the burgers were simple . . . mayo and chives)
 
You can do a lobster salad or a neptune like salad. Maybe use it to stuff other seafood, lobster cakes. Make a terrine? Cut the tails into medallions and make some Bearnaise for steak Oscar? Lobster hoagie...

Do you know the rolling pin trick to get the meat out of the legs?
 
Had a really nice lobster salad for dinner with my bride last night. The stock was on till midnight and I got it strained and cooled off nicely. It is is strong and sweet.

Lobster in tacos! :biggrin: I loved it and, the jalapeno was not too strong to my surprise as I always find Lobster to be very delicate. It's a love/hate dish as I loved it and my other half did not like it. We both love tacos!

With the broth, bisque is also what comes to mind, risotto is pretty classic.
