I love a good pickled onion or two. The store bought ones are never as good as home made ones, plus you can make them to your taste. I have not made any in a few years and finally managed to get a few jars pickling.
Anyone else make their own?
This batch I used 4kg/8.8lb of pickling onions.
Mix vinegar, spice mix and sugar. Heat to dissolve sugar but do not boil. Leave to cool.
Place onions in sterilised jars, spiced vinegar to jars. Place lids on jars and put in a cool place to age.
After a four to six weeks they are good to eat but I often tuck into a jar after a few weeks for quality control purposes that is.

- 5 tsp salt
- 1/2 tsp whole cloves
- 1/2 tsp coriander seeds
- 1/2 tsp cumin seeds
- 1/2 tsp cloves
- 1/2 tsp black peppercorns
- 1/2 tsp chilli flakes
- 1 litre malt vinegar
- 1/2 cup brown sugar
