Pastrami

Red is what we are talking about here.

Black looks more like a beef round corned and seasoned, much leaner, but i wont buy it.
 
Made this yesterday and ate it today . So easy and oh so tasty
This turned into a disaster. Followed the recipe and cooked slow at 225F for 6hrs. Ended up with an inedible piece of meat, it was so dry. I truly hate wasting food, especially meat.
The pack leaked and that could have been the issue but for the most part of the 6hrs the pack was almost bursting.

I believe the recipe is wrong.

I'm sorry to say but it was probably user error . I've used this recipe numerous times and it works perfectly. Others here have reported success.
