New Years Day - Black Eyed Peas

Besides dumping the can into a microwave safe bowl, any good ideas?



This year, we are going old school...

Roasted Pork loin, collard greens, black eyes peas, mac & cheese and corn bread.

My wife makes "Hoppin John" each year. Bacon, onion, green peppers and Black Eyed Peas. Yum!

Get dried black eyed peas and start out the new year right.

I hate that band so much that I now dislike the food they were named for.

My kids like the band, but the food, not so much.

I ended up soaking dry beans overnight, fry some crispy bacon, then cook onions until they were translucent, added garlic, red pepper flakes, salt and pepper and added it all to the pot of the black eyes peas and covered with water. Let simmer for 2 hours, and they were delicious.
