Mushroom hunting

Great mushroom season in the Southern Tier of NY right now.

Chanterelles are my favorites.
They are astringent raw.
One way around this is a little cooking,
until they just start to shrink is all that's needed
and there's no harm in cooking more.
Another way is to dip them in something mouth watering
like Buffalo wing sauce. The wine pairing for that is bojole nouvea.

Black trumpets are the only mushrooms that I only eat fresh and raw.
They have a strong flavor similar to the blue part of blue cheese.
If they're cooked or dried, that flavor goes away.
I like to mix them into cream cheese and let it sit in the fridge for a couple of weeks.
Around here they're normally an early Autumn mushroom,
but in a strong mushroom year, sometimes mushrooms appear out of season.

A rosy russula and a lobster mushroom,
which is supposed to be the result of another fungus growing on the russula.
The lobster really does smell like fish and is supposed to be good to eat
as long as there are no toxic mushrooms locally in season,
since you really can't tell what the underlying mushroom is.
I don't eat it because fishy smelling mushrooms don't appeal to me.

@DrStrange Thanks so much for contributing to this thread! I only really have a chance to post once a day or so. I found these lovelies this morning, would you say Russula? They're in the fridge at work, I'll grab better pics of the cap, etc. tomorrow

We've gotten lots of rain, so got lots of foraging to do this weekend!

Those pretty fairy caps I posted above, all gone this morning.

I didn't get a pic of how big of a flush this was they were literally covering the bedding outside our vet hospital at work. I'm 99% sure they're Amanita, the issue is I dunno what species, so these guys could be deadly or delicious. Not taking the chance, but they are very nice mushrooms and I'll seek a better ID. If anyone knows, I'd appreciate any input. They're quite a nice mushroom. I almost went to say they're brunnescens, but I can't be sure

Amanita sp. Likely deadly. Never eat a white Amanita! I love how they're almost ghostly; stark white as if to say, "maybe second guess eating me, eh?"

They are starting to come out now.
There are several closely related species which have very similar appearance,
the same toxin, and are similarly deadly, so I lump them all together
under the name Angel Of Death.
