More knife info- from CNN

Not sure about the us but over here f.dick, geisser/messer and victorinox are pretty much what i think of as the best.

Most folk over here seem obsessed by global, they aren't necessarily bad but i don't find them good, you quickly learn what works best when using them in the trade plus most chefs are sponsored to endorse a product anyway.

Me? i work in a boning hall, have done for the past 20 years or so.
 
I'm contemplating Shuns to replace my Henckels. But I'd like to hear what options you would suggest.

Check http://www.japanesechefsknife.com. They have loads of good quality knives at reasonable prices, I like the look of the Misono's. I'm sure I have seen the Masamoto VG recommended on here before. Some of these knives aren't as flashy as the Shun's, but top quality. Keep in mind that the fancy pattern and logo's will fade on the Shun's, they won't appear quite as impressive.

Man, you just made me jealous, nothin beats getting a new knife. I was gonna pull the trigger on a Misono Swedish Steel Gyuto, I had it in the shopping cart and everything! Then the sad fact that I neither needed it or could afford it hit home :thumbdown Its rubbish being poor!
 
I recognize that ... I've had plenty of knives and whetstones in the shopping basket the last couple of weeks. I ended up with the fujiwara because it was carbon (which I wanted to try in the kitchen) and because it was fairly cheap. We're only talking about a 120 mm petty here so it wasn't a major investment.

Some day I'll realize what kind of whetstones to buy too and eventually afford them :001_smile
 
Those Misono's are carbon too. I'm dying to try one. I just got a Cerax 1k/6k stone to take to work, its pretty damn good.
 
www.fine-tools.com 37 GBP including shipping. Its a german website. Not sure on the shipping cost to US. I used it to hone one of my razors, it did a fine job. I posted a pic of it in the mess hall acquisitions thread if you want to check it out.
 
I had KKAD a little over a year ago. The best book I've ever read on the subject is this one. It covers everything you need to know, regarding buying (includes prices and websites), maintaining/sharpening, storing and using chefs knives. The author also believes in owning only one good chef's knife (and maybe a paring knife), instead of buying a big set of knives. I like to have 1" and 3.5" paring knives, as well. You can get nearly anything done with those 3 knives, unless you fillet a lot of fish. I don't.

I really like my 8" Global Cook's knife. I reach for it for 90% of my food prep work.

The Messermeister Meridian Elite (better deal to get the 8" chef/paring knife set) is wonderful. I use this for larger tasks when I want a heavier knife.

This Victorinox 8" Chef is probably the best value around. It's incredibly sharp, well balanced, and very well made.

Notice that all of these lack a full bolster, which makes sharpening the entire length of the blade very easy. I'd highly recommend any of the three knives above.

I have a set of Wusthof trident GP II that I use daily. Excellent German forged blade.

But my old college roommate(who went on to attend cooking school) uses Global and has always tells me how good they are.

The shipping is so fast it defies logic. If you don't have a high end knife shop in town (ah, good ole New York) JCK is the way to go. Now if they only had some decent stones........

I'll second this recommendation. I have ordered from them numerous times and the shipping is ludicrously fast.

Also, if you are looking for something special and you don't see it on the web site, send them an email and he might be able to find it for you.

I tried to get the woman from Money Magazine to recommend the Tojiro since it is usually my top recommendation for people that want to try a really good knife at a bargain price. She didn't go for it. She liked the Shun when I told her that no one knew how to sharpen these days and at least Shun will re-sharpen their knives for free. I think for their readers it's a good line.

She also really wanted a German knife recommended so I told her about Messermeister and their tapered bolsters and lower cost.

Your store has the best selection of Tojiros I've seen in a very long time. You even have the hard to find nakiri, garasuki, and wa-gyuto. :drool: You even have one of their famous powdered steel models. Good show!
