Master Chiharu Sugai at work.

Having watched him in person several times, the video did him less justice than his skill deserves.
 
I have a special admiration for true masters of their art that make their acquired skills look ridiculously simple. It's the mark of someone that truly knows their trade. Love watching this guy work.

Personally, I like to think that I know my way around a whetstone and strop. Truthfully, I don't know crap compared to this guy.

Seriously, he's the guy who started me off about ten years ago. I don't know if they still do it, but back then he would provide free sharpening lessons by appointment. Despite the considerable language barrier, the lessons were invaluable.

Aside from basic technique (ie: hand position, finding the bevel, etc.) the most important lessons I learned were really the most basic of all:
  • This is a skill that can be learned
  • There is nothing to be afraid of
  • I can actually sharpen my own knife
  • I can teach myself to get better
