Knife Advice

I use Victorinox knives in the kitchen. They're made in Switzerland, they stay razor sharp off the wet-stones, and they're a joy to cook with. While I have never heard of the Saber brand, it does look like a good and comprehensive deal, considering the knives themselves are quality. That is an interesting looking block as well.
 
I think its too much money for too many knives-

  • 1 - 8" Chef knife
  • 1 - 8" Bread knife
  • 1 - 7" Santoku knife
  • 1 - 6" Utlity knife
  • 1 - 5" French boning knife
  • 1 - 5" Tomato knife
  • 1 - 4.5" paring knife
  • 2 - 3.5" paring knives
  • 1 - Sharpening steel
  • 1 - Large Fork
  • 1 - Shears
  • 1 - Swivel knife block
  • Made in China
 
That whole "Made in China" should steer you away REAL FAST. Only buy American, German, or Japanese (those Swiss knives might be alright, I have never handled one).

You live in New York City- take advantage of that. Go to Korin Trading in Lower Manhattan and at least look at a good knife before you decide.

I'd rather have one good knife for half the price of that set. Bread knives, paring knives, etc.- those are cheap, and you can fill them in as you go along.
 
You'll never use all those knives in that set, maybe half of them. Check out one good chef knife first.
 
I looked to fill my set with 2-3 high quality knives and then fill in the rest with Forschners... Don't worry about the cute knife block - just get a magnetic strip and hang it on the wall.

  • Forschner 10-inch chef knife (~$25)
  • Forschner 6-inch chef knife (~$15)

  • Forschner Off-set serrated bread knife (~$16)
 
You'll never use all those knives in that set, maybe half of them. Check out one good chef knife first.

+1. Way too much duplication there. I would bet that of those you will actually use:

1. Either the chef's knife or the santoku
2. One of the paring knives
3. The shears
4. The bread knife
5. maybe the boning knife

$200 for a block of mostly useless knives seems quite excessive. You could drop ~$100-$125 on a nice chef's knife and $40-$50 on a nice paring knife then pick up cheapo versions of the others listed above for about the same price. And I guarantee you would have significantly better quality where it counts and not have a bunch of useless knives taking up space.

My input would be a longish parer, a sandwich knife (boning knife could work too), bread knife, large slicer, shears, chef's blade. Insert the cleaver if you do any sort of meat processing, and even then it might not be needed.
 
Never ever buy one of those knife block sets. They are always a rip off. Spend your money on a nice Gyuto/Chef's knife... get a paring knife and maybe a bread knife. You're set for most things at that point.
