Kefir - any fans in the house?

I stumbled upon this substance many years back at the health food store. I initially thought it was simply a yoghurt, however it turned out to be much much more , health wise. Kefir can actually colonize your digestive system and as such bring balance to the inner eco system. Its a bit more sour than yoghurt (the dairy version), very lovely to consume with fruit or use as a marinade for chicken (does wonders for tenderness). I personally can attest first hand to its benefits, no prebiotic can match this..

I used to actually make the stuff too, a few years back , and quite frankly i think im going to start up again only this time , im going to try the water kefir and see how that treats me. Time to source some grains!

"Yogurt contains transient beneficial bacteria that keep the digestive system clean and provide food for the friendly bacteria that reside there. But kefir can actually colonize the intestinal tract, a feat that yogurt cannot match. Kefir contains several major strains of friendly bacteria not commonly found in yogurt, Lactobacillus Caucasus, Leuconostoc, Acetobacter species, and Streptococcus species.
It also contains beneficial yeasts, such as Saccharomyces kefir and Torula kefir, which dominate, control and eliminate destructive pathogenic yeasts in the body. You know it is funny, because I drink this stuff every day. It's definitely a big health benefit. On top of that it is much more enjoyable to drink than swallowing the probiotic pills on the market. My personal favorite is Blueberry, but I like all of them except for the recent "Cranberry Caramel" seasonal one they put out.

What is water kefir? I've never heard of it till now but it sounds interesting.

my preferred kefir if i dont make it, is from pinehedge farms, you can buy 1kg for just under 5$ (canadian)

alot of the major brands that produce it i find did not have as noticable of a health effect as this one in particular. but the best was the kefir i made, and maintained the grains for about 1 year or so .. until i moved :( its funny, when i left town my neighbour had to "babysit " my grains , change the milk , etc lol

but yes to answer your question you can also make a water based kefir to chug. If you are taking kefir for medicinal purposes i strongly advise you to start making your own , as with proper care the grains last forever, and most enthusiasts are willing to share the grains for free. if you search online you might find someone locally. however they are very cheap if you do end up buying from ebay or some other source.

My best friend is Lebanese and he turned me onto labne (kefir) 15 years ago.. ever since I eat it almost daily. I usually heat up some pita bread on the stove then spread some labne and zaatar on it... makes an awesome breakfast/snack food and is pretty filling. It also gives me an excuse to head down to the middle eastern market by my house to flirt with those gorgeous middle eastern women!
 
I'm lucky...Iive close to a few markets in Berkeley ca. that have a dozen brands of this stuff....I love them all,but try to stay with the lower fat versions...

im middle eastern as well, and i can assure you labneh is not kefir . 2 totally different things entirely.. Most arabs dont even know what kefir is in fact, yoghurt is more prevalent in our culture.

However not to take away from labneh, possibly the best dairy or dip for bread ever, with a nice olive oil.. mmm
