I have grown to prefer basmati since I can't find Stansels popcorn rice around here.
 
Very true. Proper Jambalaya calls for uncooked rice which ideally comes out a tad crunchy....so say my Louisiana friends.
I have seen recipes that stipulate otherwise but I don’t do mine with anything other than uncooked long grain white rice.
