Introducing your new Mess Hall Steward

Good evening everyone,

The mods and stewards have done me the great honor of appointing me as the new Mess Hall steward. I'll do my best to keep this one of the best sub-fora here on B&B.

Quick hits about me: I'm 25(ish), from SW Louisiana originally but have lived in Queens NYC for most of the past 7 years, have a masters in PoliSci, and found B&B a few days after I turned 21. Hobbies include cooking (obviously), tech (love me some android), hockey/football (Saints/Detroit Red Wings), and shooting sports.

I first interested in cooking as a teenager; parents took off for a weekend and told me to feed myself. As nice as it was eating Kraft Mac and Cheese for a week straight, I started to get tired of it and started playing around with food. I don't really have a speciality...I tend to learn how to cook a few dishes from different cultures and move on to something new.

I'll be the first to admit I'm not a world-class chef; many of you guys here seem like you missed your true calling as chefs at four-star restaurants. I do however have a passion for learning everything I can about different types of cooking. I'd like to put some tutorials together for newer cooks (knife skills, cooking techniques, etc) and of course help our more expended cooks share their incredible wealth of knowledge. If you want to help, let me know.

If you have any ideas, questions, comments, concerns, compliments, recommendations, recipes, or rabid, raving rants just shoot me a PM or email anytime. I'm truly proud to be able to help the mess hall anyway I can!

Congrats Craig. We'll try not to make too much of a mess for you clean up in the Mess Hall. (ok.. lame.. I know.. but someone had to say it.)

Congratulations Craig!
I will have to think up some really awkward culinary questions to ask you!!!
(only joking! I could sit here all day without thinking of a smart question about cooking).

Congratulations, Craig! I've had the pleasure in meeting Craig and I often tell him he's the son I never had (my wife and I never had any children.) What a great choice for a new steward!

Great to have you here, Craig.

Just roll up your sleeves and tuck in any loose clothing. (I'm not kidding- I've seen some of these guys eat.)

Congrats, Craig. I might just have to start spending more time in the Mess Hall.

You're always welcome there!

Hey Craig!

You really must share your recipe for squirrel, duck, and lead shot gumbo.

Do I have to? Still getting dental work done from the last one.

Congratulations Craig!

Me either! Half the fun of cooking is the experimenting.

Thanks pops!

Man, I still remember that breakfast burrito I had. I also remember our waitress.

Great to have you here, Craig.

It's not a pretty sight.
