How Many of you use Chimichurri

I love this stuff. Good for all Kinds of meats, grilled vegetables, and good for dipping French bread. Like grilling Velcro.

Easy to make

1 bunch of parsley coarsely chopped
4 garlic cloves
Fresh red pepper or green depending on heat wanted
Fresh Oregano
3 Tablespoons of red wine vinegar
1/2 to 3/4 cup good olive oil
sea salt and pepper.
mix in morning and serve in afternoon
 
Fresh chimichurri is excellent. I eye mine.

Never used oregano on mine, will try one of these days.

I do add finely chopped red onion, a bit of white wine(maybe a couple of tablespoons), and the juice of one lemon in lieu of the whole vinegar amount. Sometimes i prepare a batch with half parsley and half cilantro.
 
I do use 1/2 parsley 1/2 cilantro and lemon juice. A variation I make uses shallots.
 
1/2 parsley,1/2 cilantro, garlic, oil, vinegar and salt. That is how i make it and it seems to be a hit when i do some picanha at home.
