How do you like your eggs?

I love eggs (makes me think of the movie Pink Flamingoes) but I'll eat them just about any way except pickled (never developed a taste for those). I love making them at home, my personal favorites at home are over easy, poached easy or soft boiled. At a restaurant I usually go over easy. Although, if they have something fancy (like egg in aspic) I'll go with that. If anyone's a fan of the Bond novels, he eats a lot of eggs.
 
We had bacon and eggs for dinner tonight, two large & runny sunny side up, a side of the pinnacle of potatodom, potatoes fried in duck fat, the best!

2 eggs broken into a bowl prepped with Spanish virgin olive oil. Break up the yolks with a sharp knife and salt to taste. Microwave for 1m 10secs. If you don't break up the yolks they explode. Eat with a dessert spoon.

This is my usual breakfast, together with wholemeal bread.

Fleming even included a scrambled eggs recipe in one, I can't remember which one though.
 
I drop a meatball made of Jimmy Dean sausage and small cubed ham into an Egglettes. Then I whip some Tobasco and salsa or other flavoring like Arby's 3 pepper sauce into 3 jumbo eggs. Boil, pop em into a container to store in the fridge. One of those and a cup of dry Cheerios is my weekday breakfast.
 
For me it is eggs from my chickens (or ducks). Sure they are fresh and they run around eating bugs and weed my garden... but the store bought eggs or other sources or while dining out leave me wanting. If I eat eggs out order some method of cooking so I can confirm it was an egg rather than something that was poured from a container and cooked. I will be sad if I ever end up without a supply of fresh eggs.

.ps most of my chickens end up with names... sometimes the names change from beep or spot, and hopper etc to something like soup, wings or nibblins.
 
Lately I am really digging these Sous Vide egg bites for a quick make ahead breakfast. Usually make 8 at a time and mix up the ingredients, cheese, chives, mushrooms, ham, bacon, etc. and a couple of plain ones.

Made a bunch of hard boiled eggs last night and made egg salad out of half. My kids are in the poultry project in 4-H and we have 5 laying hens. One we adopted whose not laying yet. Also 6 chicks that will go to freezer camp before they start laying. We have so many eggs at the moment it’s hard to eat them all. So we share with neighbors.

One of my favorite fancy egg recipes is asparagus with a soft boiled egg and miso butter. The butter and yolk mix together and it’s magic.
 
We don't have them often but eggs and chips make a good dinner, homemade fries dipped in over easy eggs.
I do like my scrambled eggs with a dollop of sour cream mixed in. Plain yogurt works too.
