How do you cook your brats?

My system is tried and true, but I'd like to hear any interesting alternatives!

I boil in beer with about 1/4th of an onion (the rest is caramelizing with peppers) and some hot sauce. Then finish them up on the grill to make them a little crisp on the outside. Serve them up on a bolillo roll with onions, peppers, some avocado and mustard of choice.
 
I cook mine same as you. Boil in beer w/ onion and then finish on the grill. Have never tried adding hot sauce to the beer/onion mix. That's a great idea, i'll be trying that next time.
 
I'll be adding some hot sauce to my boil next time, but yup, usually beer, sometimes a bit of stock if it's around, then onto the grill with a plate of sweet and banana peppers and onions. Avocado sounds good too.

Also, there's a local place with outrageous sauerkraut, Bavarian sausage house IIRC... I don't need to know the name because I know how to get there about six different ways XD
 
I don't bring them to a boil (they may burst), but I use an aluminum tray on the Weber grill with all the brats and pour a large beer over the top (until they're just covered), then leave to simmer for 15-20 min followed by grill time for color/char. Haven't tried the onion or hot sauce yet. The beer-simmer/grill trick is the only way to make sure they're cooked all the way through without burning on the grill.

I poach them in wine for a bit and then grill them over a low temp fire for about five minutes per side.

Me too. Grilled until bursting and blackened, serve with some grilled cabbage... good stuff. One of my favorite grilled meals.
 
I like stewing in beer cooing the liquid off to brown a bit. One mistake I've made is to over cook them they can get to dry.
 
I cook them on a griddle. I like them to get browned on the outside, nice and crisp, and the flame of a gas grill doesn't quite it done enough. Sometimes I cook them on a charcoal grill and they get plenty browned there.
 
Smoke 'em or bake 'em - there's no better way to cook a sausage IMHO

I have baked mine in a pan, and they were partially submerged in beer then. I've fried them up a few times, as well. But it seemed harder to get an even cook.

A word of caution when adding hot sauce to the beer boil: any guests who are sensitive to pepper may find the air in your kitchen too spicy. *cough*

My best friend/best man/Air Force buddy from Wisconsin showed me how to cook 'em that way about 15 years ago and I wouldn't do them any other way.

This. I grill my Brats same as I do hot Italian sausage. Toss them on the grill, and then top off with either sauerkraut, onions, and spicy brown mustard or steamed bell peppers and onions.
 
Pan seared in a little olive oil till brown, take em' out. set aside. i then thinly slice a big ol' onion and green pepper, add to the same flavored pan and cook about 6 min till caramelized then return the brats and continue cooking everything for a few min.
