Honeyed Potatoes.

I made these last night for dinner and I thought they were very good.
Slightly sweet, but not too sweet. The quality of the honey will affect the taste. It's the kind of recipe that doesn't really have the quantity of ingredients listed.

Honeyed Potatoes

Potatoes (suitable for oven roasting)
Honey
salt (I prefer rock salt or kosher)
oil (canola or similar)

Clean potatoes. Cut them into chunks around 1" in size.
Put them in a pot and bring them to a boil.
When they start to boil, take off the heat and drain immediately.
gently toss with oil.
Transfer to a baking dish and sprinkle with salt.
bake at 350F for 20 min.
After 20 min. baste with honey.
bake for another 20 min.

I just cut them into chunks.
they were all random sizes.
I was trying to say no smaller than a chunk about 1" in size.
not like hashbrowns or anything.
big chunks.

SWMBO and I were not sure what the par boiling would do, but they came out nice and moist.

I do that with Carrots and sesame seeds! :thumbup1:
